November already!

Just a quick note this morning, mainly to introduce my TGIF recipe.  It is Zucchini Slice.  For some reason this has always been a favourite in this household and thank goodness because it is so easy, nutritious and most tasty. You can add other vegetables if you wish.
Zucchinis are not the cheapest vegetable around at the moment, but they are still affordable.  Am sorry there is no picture of the slice, will have to take a picture next time I make the slice.

Zucchini Slice

Preparation time: 15 minutes or less

Ingredients
3 zucchinis, (medium) grated
1 carrot, grated
1 cup self-raising flour
3 bacon rashers, diced
6 eggs, lightly beaten
1½ cups grated cheese
1 large onion, finely diced
Salt and pepper to season

Method
1. Add all ingredients to the one bowl and mix well.
2. Pour into a well greased 16 cm x 26 cm lamington tray and bake at 180°C for 30 - 40
minutes or until browned.
3. Slice into fingers when cool.
4. Serve hot or cold.
